Raw papaya has a mild, almost bland flavor; it is the medium through which powerful flavor elements get body and form. It absorbs the spicy, sour, sweet and salty flavors and gives them a crisp, chewy texture unlike any other vegetable. Additionally they have a long list of health benefits.

How to use Raw Papaya
Pachi boppayi is grated and added to salads, or cut into cubes and steamed for five to seven minutes, or cooked on the stovetop with a little water, or pressure boiled for one whistle. The raw fruit is used in a number of exquisite dishes, including curries, halwas, dips and accompaniments to kebabs and pakoras. Desserts such as shakes and smoothies frequently feature sweet and ripe papayas. Tenderizing meat with papaya is also common. Papaya is easy to use and can be used in preparing a wide range of dishes with a variety of flavors.
Grows best in well drained, rich soils with a uniform texture. Foot rot and leaf curl virus are fatal diseases to protect against. Seeds are sown in seed bag and transplanted to the main field when ready. Fruiting begins at 9 months and continues for a couple of years. Hara papita can be stored in a plastic produce bag in the fridge. To keep them for longer than three or four days, a paper towel can be wrapped around the fruit to absorb extra moisture. They can be kept for about two weeks this way.
We grow multiple varieties in different stages in parallel at our farms, thus trying to make fruit available round the year. Fruiting is reduced in certain seasons though.
